Spiced Apple Yoghurt Slice

A quick and simple cheat version of a grain free apple pie. I love this slice chilled as a quick afternoon bite. Simply serve in mini squares for a special afternoon tea.

If greek yoghurt is a problem, it can easily be replaced with coconut yoghurt, just mix it a little first as it can be quite hard and maybe mix in a little coconut cream to resemble greek yoghurt consistency. Don't worry the yoghurt does not need eggs to combine, strangely the yoghurt bakes well and once chilled sets.  Do not cut the base until completely chilled.

This base recipe can be used with any of your favourite slice toppings or even cut into squares and dehydrated on 40C and serve as a little raw snack.  Simply add a little flavour, zest of 1 orange and 1/2 cup organic sultanas or organic goji berries.
The soaked chia seeds act as a gluten replacement so make sure you let them sit until they have become gelatinous. They keep the base from crumbling once served.

Spiced Apple Yoghurt Slice

⅓ cup organic rapadura sugar
½ cup organic coconut oil
1 cup green banana flour
2 tablespoons chia seeds - soaked in ¼ cup water
juice of ½ lemon
⅓ cup organic shredded coconut
1 teaspoon bi-carb soda
1 teaspoon ground cinnamon
pinch salt
 cups tinned pie apple (or stewed apple - strained)
1½  cups greek yoghurt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
Pre-heat the oven to 180C and line a 34cm x 20cm slice tin with baking paper.
Process all of the base ingredients in a food processor until completely combined and press into the prepared slice tin. Bake for 15 minutes and set aside to cool for 30 minutes.
Spread the pie apple over the base, top with yoghurt and sprinkle with the ground spices.  Bake for a further 20 minutes.
Cool on a wire rack.  Refrigerate overnight before cutting.  Serve chilled.
