Roast Lamb, Fig & Goats Cheese Salad

I love quick and simple food.  Especially quick food.  Food that I can eat and enjoy with every mouthful.

I find that if I am enjoying my meals then it is so much easier to stay healthy.

Roast Lamb, Fig & Goats Cheese Salad

Serves 1

100-120g roast lamb - cold & sliced
2 large handfuls baby spinach
¼ cup mint leaves
1 tbs goats cheese
4 figs - cut into quarters
5cm cucumber - cut into small dice
drizzle of olive oil 

Toss the baby spinach and mint leaves together and place onto a plate or bowl.
Arrange the remaining ingredients and drizzle with olive oil and sprinkle with sea salt.
Serve immediately.

This can be made the night before and put into a lunch box for a work lunch.
