I love quick and simple food. Especially quick food. Food that I can eat and enjoy with every mouthful.
I find that if I am enjoying my meals then it is so much easier to stay healthy.
This recipe is part of my #reboot program in week 2. Try it now.
Ingredients100-120g roast lamb - cold & sliced2 large handfuls baby spinach¼ cup mint leaves1 tbs goats cheese4 figs - cut into quarters5cm cucumber - cut into small dicedrizzle of olive oil
Method Toss the baby spinach and mint leaves together and place onto a plate or bowl.Arrange the remaining ingredients and drizzle with olive oil and sprinkle with sea salt.Serve immediately.This can be made the night before and put into a lunch box for a work lunch.
