Nut Free Flour

As I continue to create more recipes for lunch boxes and encourage the kids to eat more Paleo inspired snacks I continually come across one big hurdle.  

Nut free or nut aware school policy.  

For those of us eating a gluten free and Paleo lifestyle it is difficult and frustrating.

I completely understand that a child with a nut allergy is facing a life threatening illness and can be just as frustrating for those parents, however for those of us not wanting to feed our kids numbers and additives that are loaded in gluten free shop bought alternatives.  Not to mention how disgusting gluten free bread is as a sandwich.

So I have created an alternative that will keep both the nut free families happy and  Paleo families happy.

Substitute this flour for any recipe you see that requires almond meal and you can happily keep the lunch boxes additive and gluten free.

Nut Free Flour

½ cup sunflower seeds
½ cup pepitas
½ cup desiccated coconut
½ cup sesame seeds

Combine all ingredients in a food processor or Thermomix for no more than 15 seconds on a high speed.
Process until it forms a flour, being careful not to over grind and make a seed butter.
Store in an airtight container in the pantry and simply substitute for any almond meal recipes.
