Hedgehog Slice

This recipe is not really like the traditional Hedgehog Slice I loved as a kid, but it is packed full of whole foods with healthy fats and grain free flour.

A perfect slice to quickly put together if visitors are coming over or even that 3pm afternoon snack.

If you have had a look around my website, you will see that I love banana flour and have created a number of recipes using banana flour.  This recipe is just another great banana flour recipe.  Gluten, grain and dairy free, so perfect for nut free school lunch boxes.

When choosing a dark chocolate make sure you check the ingredients for other additives such as vegetable gums, emulsifiers and extra sugar.  Some cooking chocolate can have up to 30% refined sugar.  

If you are still struggling to find a chocolate suitable to your baking needs, try cacao paste.  It is the main ingredient in all chocolate making and doesn't have any added sugar.  Cacao paste is often sold in small 500g or 1kg blocks, so just shave off what you need and add it to your recipe.

2 tablespoons chia seeds - soaked in 1/4 cup water
⅔ cup banana flour
2 tablespoons cacao powder
½ cup coconut sugar
⅔ cup desiccated coconut
1 teaspoon bicarbonate soda
pinch salt
½ cup coconut oil
100g dark chocolate - melted

Pre-heat the oven to 170C.  Grease and line a slice tray with baking paper.
Once the chia seeds have soaked up all of the water and become gelatinous, combine all ingredients except the melted chocolate in a food processor or Thermomix. 
Turbo pulse for a few seconds or until completely combined.
Add the cooled melted chocolate and pulse for a few more seconds.
Scrape the slice into the prepared slice tin and bake for 15 minutes.
Cool on a wire rack and once completely cooled remove from the tin, slice into squares and refrigerate in an airtight container.
